Fresh Shiitake mushrooms cropped in the farm of Mr.Sato in Yufin are
grilled on the charcoal stove.
Only a small amount of salt is
sprayed on the mushrooms. The juice comes out of the surface after a
while.
When the juice covers the inside of the
cap, it is good timing for serve.
Be careful not to spill over the juice. Squeeze a piece of Kabosu
lemon strongly and dip the mushroom in it. The smart way is to pick the
mushroom at the stem bottom and eat with a kingly zest. A dream-like
flavor of sweet and sour juice filled my mouth. I was completely
captured by the taste of Yufuin mushroom.
After taking the mushroom, only the stem
bottom part was left in the dish. What shall we do this?
Well, slice
them lengthwise and put them on the fire again. Enjoy it after a while
when some part of them turned brown. "What a good taste it
is!"
