Fresh Shiitake mushrooms cropped in the farm of Mr.Sato in Yufin are grilled on the charcoal stove.

Only a small amount of salt is sprayed on the mushrooms. The juice comes out of the surface after a while.
When the juice covers the inside of the cap, it is good timing for serve.

Be careful not to spill over the juice. Squeeze a piece of Kabosu lemon strongly and dip the mushroom in it. The smart way is to pick the mushroom at the stem bottom and eat with a kingly zest. A dream-like flavor of sweet and sour juice filled my mouth. I was completely captured by the taste of Yufuin mushroom.

After taking the mushroom, only the stem bottom part was left in the dish. What shall we do this?
